This is a nice moist cake. I did use the coconut, but will leave it out next time since my daughter doesn’t care for it. Maybe I’ll add some toasted nuts and make a banana nut cake.

I also used white whole wheat for about 1/3 of the flour, and they were still as light and cakey as you would want them to be. Nobody was the wiser, either.
did your cakes take full 45 minutes to bake? i went to turn mine a the 25 minute mark and it was ready to come out! i use an oven thermometer, so i know my temp was not off…haven’t cut into it yet, but i hope it’s alright.
Now that I’ve made it: scratch that. Mine DID take 40 minutes to bake, and was so dark it looked near burnt (but totally isn’t. I didn’t see THAT coming.
I made this last week (got the recipes mixed up) and I didn’t think it was overly banana-y. The coconut added a nice sweetness. I generally don’t like bananas but I do ok with banana bread, and this was similar yet different.
I did a single layer cake, dusted with powdered sugar.
This is one of my new favs.It’s so moist and tasty. I left out the rum but used the coconut milk in the cake and in the frosting. I put mine in a 9x 13 pan and cooked it for 40 min. It was perfect and so yummy!!
I don’t know if I’m gonna make this one.

They sure do! The recipe makes a bunch though – I got 36 cupcakes! I baked them at 350 for 17 minutes or so.

I divided the recipe in half and it made 6 mini-bundt cakes. :)
Bananas and rum. What’s not to like. These are really moist.

Hi, Cindy. I used a MINI-BUNDT pan (which makes 6 cakes.)
If you go the cupcake route, you should be able to get more than six. :-)
I halved the recipe and still got two 4 inch cakes and 3 cupcakes.

For those who made the full layer cake: how thick are your layers? I am thinking of decorating mine and need to know what size pan to bake in.
never mind. I used the 9-inch pans and the layers came to just a tiny bit over an inch high each.

I can’t imagine a 9-inch layer cake taking that long to bake; 25 minutes sounds about right to me. Maybe that was intended for a different sized pan?

I accidentally used a full can of coconut milk and it was still good. It really is a “lots of ways” banana cake!
Be sure to check this cake early! Mine was done at 30 minutes!

It’s possible to ripen bananas in the oven by baking. They get a bit juicy but it works.
I agree that this one is a yummy banana cake! I did mine as cupcakes with cream cheese frosting and they were a big hit!
I draw the line at bananas in baked good…not even for the hubby. Sitting this one out. :)
Made it in a loaf pan. Seems nice, though maybe not much to write home about.
