Yes it’s pudding -Kraft red box (one of my faves!). I think it’s used as a thickener in the pie. The bread crumbs will help soak up the runniness too and you won’t even notice them.
I use quick-cooking tapioca in fruit tarts and it helps the fruit get all gelled and yummy. It’s in the baking aisle, usually near the boxed pudding mixes…fairly inexpensive, too. And lasts for a long time!
It’s not actual pudding-pudding, but rather the tapioca pearls that you find in the pudding. In this form, they are small little white beads.
I skipped both bread crumbs and tapioca–it’s a judgment call depending how juicy you think your apples are. You can also use tapioca starch, which is sold in asian markets.
My life has been crazy. I’ve baked a bunch of Dorie recipes, but have not been able to post, usually because I was somewhere for extended periods of time with no ability to post.
So, in addition to the apple pie, a bunch of past recipes will be going up. I have LOVED everyone’s picks!

I’m using “instant” tapioca. I wonder if it’s the same as “quick-cooking” tapioca.
Guess I’ll find out shortly. It’s in the oven now.
