P&Q: Lemon Poppyseed Muffins

I forsee some orange poppyseed muffins in my future? Lots of snow and only oranges and tangerines in the house. Its still citrus, right?

  1. I “healthified” these since I am still doing my month without butter thing. I used white whole wheat flour, low-fat buttermilk, non-fat greek yogurt and a little canola oil instead of sour cream and butter. They turned out really good.
    I made 1/2 of the recipe and got 24 mini muffins.

  2. Made these today, but I didn’t have any poppy seeds. I filled with some raspberry jam. I also skipped the muffinv tin and used mini loaf pans. Still tasty though!

  3. I made them this morning and they’re really good. I subbed yogurt for the sour cream and the texture seemed fine. I used muffin papers to line the pans and I would recommend not using them, since the glaze dripped on the papers.
