These were easy. I made them pretty much exactly as the recipe stated-but went heavy on the cinnamon. These muffins crowned beautifully! Nice choice, Nancy!!!!!
These taste fantastic without the carrots! :P I found this out by accident. When I made them for the third time, I decided to put in the carrots. They just weren’t as good.

These are lightly spiced muffins, so amp up the spices if you are looking for bolder flavors.

Has anyone had the urge to top them with a swirl of cream cheese frosting?
I added extra carrots ’cause I love them. Perfect warm from the oven spread with soft butter or cream cheese.
