For me, I think it’s tortillas. I made flour ones once, and they were really tasty. But I can buy great ones at the store, and I just don’t feel like it’s with the time to roll them all out. =)
Ladyfingers. Yes, I can make them, but I’m getting older and I can stand in the kitchen only so long. So, when making Tiramisu, I buy the ladyfingers.
Don’t ya just LOVE Tiramisu?
This isn’t so much baking, and I know it’s probably standard for everyone. But I always buy mayonnaise. However, I really want to try it from-scratch someday.
I don’t think I’d ever buy ice cream again. After getting a machine and making my own for over a year – it’s just so easy and better-tasting. Wait – I think I just answered the question in reverse. Something I would buy and “not” make from scratch would be salad dressings / vinaigrettes. That’s just lazy . . .
If I had the time I’d try just about anything. But I think I have to second the comment on mayonnaise above. And since it’s summer add bread. It’s just too hot to have the oven on that often when I know where to buy great bread.
I am newly obsessed with home canning. But I live in an area where I can buy great pickles, jams, and relishes canned by Amish and Mennonite ladies who know what they’re doing. I might make some freezer jam but I’m leaving the complicated stuff up to them.

Worth the time, not with the time. Oops. =)

Crackers – the home made ones taste good, but so do the bought ones!

I’ll second Di’s comment on flour tortillas and add pasta to the list.
For me it’s puff pastry. I can get a great all butter one from Trader Joe’s. Nothing I need to make at home.
Tortillas, mayo and puff pastry for me, too, and curry paste.
Puff pastry-it’s too easy to buy and keeps well in the freezer. Maybe also flour and corn tortillas, too.
