  1. I’m eating one now. Very yummy. As Dorie says, they’re like a scone. I followed the recipe except for switching the amounts of white and brown sugar.

  2. I’m really curious about these. Dorie says they are scone-like… so are they dry? Are they thick and cakey or chewy?

    Do they lend themselves well to being made into cream cheese frosting filled sandwich cookies???

    I guess we will have to see :)

  3. In case you are wondering, these are NOT like mini carrot cakes. They are WAY better. Hot out of the oven they remind me of a scone. When cooled, they turn into real cookies. If you like granola, you will like these.

  4. Ordinarily, I wouldn’t have made these cookies, since I’m not a big fan of carrot cakes. But, I have to say, they are really delicious! I ended up with 5 doz plus a few extras, which, of course, had to be taste-tested. I also substituted currants for raisins. Texture is more cake-like.

  5. They still taste yummy on day three too! I was thinking of adding some kind of drizzle but I didn’t get around to it. They are perfect as they are. Maybe I’ll try that next time just to see the difference.

  6. My husband suggested icing these with cream cheese frosting, but I’m just going to leave them plain. They are almost savory and I think you could pair them with roasted vegetable soup. They are different and I like that.
