  1. By the way this works with “creamed corn” too – if you open a can and then realize it’s not whole kernel [and wonder what possessed you to buy creamed in the first place].

    I’d go for the 1/3 more corn Dorie suggests too.

  2. I left out the corn kernels because I’m kind of a spaz about corn. I added in the herbs- rosemary and thyme- but I steeped them in the oil to try and enhance the flavor. It was still just a hint of herb in the background. Still delish though!

  3. I’m debating leaving out the corn (don’t care for chunks of corn in our cornbread, but might add some jalapeno and a little spice. Planning to make chili tonight with these for dinner.

  4. left out the corn kernels. it’s a texture thing. wanted to add cheese and jalapenos, but i forgot. guess i have to make them again ;)

    and i’ll bake them for 1-2 minutes less, i over baked ever so slightly.
