  1. I tried this as mini cakes and although they tasted great they didn’t have enough structure (or too many mix ins) to unmould from my mini bundt or shaped cake moulds neatly. I made 1/2 choc chip and half pear and prune.

  2. I made this a while ago using Mexican cone sugar…it was a bit dry but full of melty brown toffeelike lumps…interested to try with more dried fruit–I have a cupboard full of it.
