I thought I was going to miss the crumble or topping, but this does not need anything! Just a dusting of confectioner’s sugar and you are good to go.
The flavor was wonderful! You have to make this!
I concur – this is so simple to make, but is very good.
This is excellent. I served it to company with a scoop of ice cream. One of my guests said, ‘this doesn’t need ice cream, it can stand on its own’! I would agree.
Any thoughts on a good substitution for the blueberries? They’re not very popular around here. I wonder if blackberries might work.
I think blackberries would be perfect. We liked the cake with blueberries but I was wishing they were a bit more tart (they were cultivated not wild), so flavorful blackberries would take care of that, imo.
My blueberries sank to the bottom of my cake, so I should have mixed them with a tiny bit of flour. The cake tasted wonderful!
Nicole – I made this twice and both times the berries sank, even mixed with flour AND putting them on the top right before baking. No one seemed to mind (but me) – and love them!
Yes, blueberries sank! But is was still delicious.
Plain and yummy.
I don’t have an 11×7 pan, is 9×9 the next best thing for the closest volume? (I don’t do math.) ;)
9×9 is a little bit bigger, but not much. I think it would work fine.
9×9 is the closest square pan size, a tiny bit bigger. I used an 8×8 which is a fair amount smaller, but it worked well.
I just made this today and it’s delicious! So moist and the blueberries give it just the right amount of sweetness.
looking forward to this one–I’m still baking with the group, though I haven’t been posting enough…catchups soon.
Fresh blueberries aren’t available easily in India and the frozen ones are really expensive. Would it be okay to use fresh cherries instead?
