I’m thinking of trying one of the variations, but using cranberries in stead of cherries.
Mine just finished cooling. Not that I waited until they were cooled to taste them. Awesome!
Mmmm, these were very tasty. Nice and chocolate-y. I only baked half of them twice. I love the softer “once-baked” version.

I absolutely LOVE these! I didn’t add the espresso powder but did add 1/2 tsp. almond extract to enhance the almond and used 1/2 c. mini semi sweet chocolate and 1/4 c. white chocolate chips. YUM! I baked them only a tad bit longer on the second cycle. Not the full amount since I, too prefer a chewier biscotti. Seriously, SO yummy! Not too many problems with crumbling, BUT we are having a hard time letting them cool…just too good to leave alone!
