  2. Thanks for this tip – I was just questioning what the heck I would do with eight egg yolks, so I will cut back on the egg whites for the meringue and thus end up with fewer spare yolks.

  3. I ended up using two egg whites (I only made two desserts).
    I did make the full recipe of the curd, because, well, lemon curd. Enough said…
    The flavors were great in this – anything soft and squishy surrounded by crusty phyllo is a little tough to eat with a fork, though….
