  1. My pearl tapioca disintegrated when I soaked it. Then I couldn’t find any more tapioca. So this one was not meant to be. Not sure if I would have loved it, anyway.

  2. I’ve never eaten tapioca before and I wasn’t looking forward to this recipe, but I actually love it! It’s easy to throw together. I found the vanilla extract was key though — it makes the coconut flavour richer. I topped it with caramelized bananas and it was a definite win!
