I did it sans bread machine – proofed the yeast, a cup of flour and the water for 15-20 minutes (until it was bubbly) and then added the rest of the ingredients and then kneaded in the stand mixer and performed the first rise in a covered bowl. I reduced the yeast to 2 1/4 tsp, but next time would reduced it further (1 1/2 perhaps) – as it was a bit too much yeast for the amount of flour.
