    • you could probably whisk the yolks with the sugar and booze sabayone-style over a water bath. there isn’t really enough sugar in the recipe, though, to cook the whites with a sugar syrup or like a Swiss meringue. can you use pasteurized eggs?

  1. It was a little hot for weekend baking here, so I doubled the filling for the tart and bought an angel food cake and turned the tart into a trifle…
