  1. I made both today (YUM!) and found the Viennese Sablé dough incredibly stiff to pipe – had to use a larger piping tim and warm the dough in my hands before it was able to pipe properly. Because of the larger tip it was hard to get the cookies the right size (the photo makes them look bigger than the directions too) so I only got 36 from a double batch.. But wow – do they ever taste like the ones in the blue tin!
