I almost went the oatmeal direction. But just decided to do the original with pero instead of espresso.
Can’t wait to see both of your oatmeal versions!
Also, my eyes are peeled for September recipes. I’m so anxious to see our first fall bakes!

Pero is an instant natural beverage made from malted barley, barley, chicory. Not sure if it compares to how the shortbread tastes with espresso, but I thought it turned out pretty good. :)
I loved the flavour of these cookies! Quite hard to stop at one :-)
I’ve just made the chocolate – espresso ones and they are fantastic (no spread !)
I’ve made these a number of times. My favorite sub was chopped Lindt orange/almond chocolate. Mmmmm. DO NOT skip the chill. It is essential for these cookies to hold shape. I use my pizza cutter and ruler to get nice straight lines.
Orange/almond chocolate….yuuuum!!!!
um yeah, the orange/almond sounds way good. and yes…100% agree with not skipping the chill. I let mine chill for like 5 hours. I usually like to do it overnight, but couldn’t wait.
These are amazing! Delicate and rich all at the same time. I was too lethargic to go out and buy a package of zip lock bags so I used a 12″ pie crust slipcover and made 1 1/2″ circular cookies instead (with just enough scraps left over to nosh on.)
I bet the circular cookies were so cute. Can’t wait to see yours! How fun.
I’m not a fan of coffee but these were definitely FUN to make. It was so satisfying to slit open that zip lock bag and be able to cut perfect squares. I only had a nibble, but my husband thought these were fantastic.
I know it’s early, but is the September recipe list available yet?

I may be the rare dissenter, but I wasn’t wowed by the oatmeal version. But the espresso/chocolate version was AMAZING.
ok, i didn’t make the oat version, but i’m with leslie that the esp/choco is AMAZING!
I just finished eating 3 of the Oatmeal Spice version. The spice mix got me excited for fall baking. I think they are perfect!
These may be late as my oven has gone off the deep end. They sound very good, though.
I hope to bake these tomorrow. Yum, shortbread!!!!
I’d also love to start baking for September – is it possible to have a hint of the first week’s recipe pick?
Just FYI, these work out really well as slice & bakes – I just form a log, freeze, and slice off & bake as needed.

So since there are no eggs in the dough, is it okay just to eat it all without baking? jk!
But good stuff. I don’t “do” coffee, so I used some hazelnut flavoring. So good. Just made the dough and it’s chillin’.
I made half a recipe, so now just for fun, I might make the oatmeal one, too.
mmmm I was tempted to add a little raspberry to these as my favorite Starbys drink is a tall raspberry mocha frappachino. My dough is chilling as we speak. :)
I left out the espresso, so they were more “kid friendly” and they were soooo good, they got two thumbs up from a 2 1/2 year old too!! ;-)
I didn’t even notice the oatmeal version till you all were talking about it. I made the espresso-chocolate version for my SIL and nibbled on a couple myself to try them. They were delish! I figured the espresso wouldn’t buzz me any more than a tiramisu… but I must be a real caffeine light weight now because I could really feel the coffee buzz (which wasn’t a bad thing yesterday!).
I want to go try the oatmeal version with cocoa nibs now!

I, too, felt the coffee buzz from these. Note to self, after giving up caffeine for 6 months, espresso chocolate shortbread cookies before bed is a BAD idea.
I liked that they weren’t too sweet and would be a great match for a cuppa joe :-) Probably decaf, though.
I just finished baking mine – I only chilled the dough for about 3 hours and they came out just fine, in case anyone is short on time.
