These cookies were not quite what I expected (of course I didn’t read Dorie’s intro first). They really are quite like sponge cake and lightly chocolate. I left out the raisins with no issues. I think these cookies are best once they’ve cooled and they are particularly good when you sandwich two cookies with some filling. I did some with this pb filling: http://spikebakes.tumblr.com/post/4605736421/whoopie-cookies and they rest as ice cream sandwiches. They are soft cookies and absolutely perfect for ice cream sandies.

Yeah, these needed a little something. I used strawberry rhubarb jam as a topper.
These are very good sandwiched with frosting – I had some oreo cream cheese frosting, and the result was awesome.
