I am with you — actually I didn’t realize until Monday that I needed to bake on MONDAY! ha! ha! I’ll be checking more often in the future.
We really enjoyed these – my nieces each made a version. My mother said that though she liked these, she prefers a traditional pie for showcasing berries. I liked this, as a change. We didn’t have any trouble with the filling running. I was impressed how sturdy the dough was and how well it contained its contents.
Loved it and would make it again. Enjoyed a bit of a crunch in the crust from the cornmeal.

I’ll definitely make this again. I’m tempted to try the cheese and tomato version with my remaining dough. Since we have so many growing in our garden right now…
I tried it and it turned out great. Even with a juicy heirloom tomato, the juices didn’t leak like the berry one did!
I also made the cheese and tomato version. I think I liked it better then the berry. I think with a salad it would make a great lite dinner.
With my second crust I made the cheese and heirloom tomato version. I started with a blend of Italian cheeses, a little pepperoni, topped with tomatoes and sprinkled with Parmesan. Oh my gosh it is fabulously delicious and the crust stays crunchy and lovely!

It’s always the first and third Tuesday of the month. Last month we had an extra Tuesday, so we baked again tis week.
I made minis and stored them in the fridge over night. The ‘character’ changes (the filling gets more dense and the crust less crispy) – but ‘different’ is not ‘worse’ in my eyes.. So: perfect when still slightly warm and crisp, but also delish when they are cold. Plus: As minis they really look cute and would be a pretty looking dessert with a spoon of icecream or a creme fraiche on its side!
Love the idea of minis!
I didn’t realize we were doing one again either. But I made the tomato galette a couple weeks ago and I think I put some more dough for the crust in the freezer, if so, I’m going to have to whip this one out because I don’t want to miss it. I was thinking it was for next week. Love galettes. And the tomato and cheese one is de-lish!
I think I took one of the easier recipes and made it harder, but it was great dough to work with!

I loved the simplicity of this recipe. I thought I’d messed the crust but it turned out fine. I’d definitely make this again!
If you had trouble with juices overflowing, try adding 1 teaspoon of tapioca flour to the fruit. I buy Bob’s Red Mill tapioca flour at Whole Foods. Also, this makes an excellent savory galette. Last night I used the dough with a ricotta zucchini filling. Yum!
So much easier that pie…..and so delicious!
